Elite propaganda.
Medieval knights were a bloodthirsty elite. Armour allowed them to cut down commoners with relative impunity, and they did. The myth of the 'parfait gentil knicht' is entirely propaganda.

Two books from my research shelf: 'The History of the English Longbow' by Donald Featherstone, and 'The Use of Medieval Weaponry' by Eric Lowe. Both of these I'd recommend.
My own home-made longbow, with its quiver and arrows, and my practice longsword.
