Something nice to look at. I used a portion of the extra pumpkin puree to make pumpkin (with raisin) muffins for my snacks.
They are not too bad, but next time I will add more of my homemade pumpkin pie spice and pumpkin puree as the taste was a bit too subtle for me. I may also add a bit of rolled oats to pump up the fibre.
