This is what we call « Scottish shower » in French. My Ooni Volt 2 finally arrived. But the stone is broken. No pizza for me today.
Also bringing this 25Kg beast up two stories was a PITA

Une tarte Tatin très caramélisée. Elle a des zones bien foncées et est très belle et très lisse. Posee sur une grande assiette blanche avec des dessins, sur un plan de travail en hêtre clair.

Third variant of the « carbonara pizza » and the very best so far. Heavy cream base, then mozzarella, then smoked duck magret slices. After it’s cooked, parmesan and an egg yolk, then red Kampot pepper.

A carbonara pizza! The base is essentially ricotta and cream, then mozzarella and guanciale, and after cooking an egg yolk, Parmesan flakes and a shitload of red Kampot pepper. A drizzle of truffle oil just for fun.

Today's experiment. I've been making pasta for years now and yet I never tried ravioli!

The ravioli mold is covered with a first layer of pasta, and each slot filled with the stuffing (ricotta, nuts and basil)
And the final ravioli are left to dry a bit on the workbench

I got to use the fancy-ass pasta plates! And now I understand why their useful volume is so low. The ravioli were very good but what we call in our French jargon, « étouffe-chrétien ». I thought 10 would be barely enough but 8 were almost too much, and I only eat once a day.
