I can't get hold of any sauerkraut juice near me, so I'm back to my usual method of making rejuvelac to be the ferment for my cheeses.
It's a really easy process, I use rye grains for the best flavour. I follow a recipe I got from Miyoko Schinner's Vegan Pantry, years ago. But this is pretty much the same recipe

The latest “Cook’s Illustrated” has a small-batch “British-style” scone recipe. I tried it with GF flour.
Cakey texture because, unlike my preferred scone recipe, this has you soften the butter and rub it into the flour — so no layers that otherwise chilled and folded butter gets you.
Came out well. Will repeat (and cut ¼ of the GF flour, swap milk for cream to see if that helps with GF dryness).

A good build system is a glorified tool to invoke the toolchain and copy files. The problem with #PEP517 is that it doesn't try to be that. It attempts to be some hybrid between a build system and a package management tool.
It's basically, as if some C project supplied a .spec file (RPM building recipe) instead of a build system, and told you "you can always build a RPM, and then unpack it".
How would a perfect #Python package install process in #Gentoo look like?
1. You unpack a source distribution (.tar.gz).
2. The build system copies .py files from the source distribution into the install directory, using copy-on-write. You end up with N copies of every file (for every Python version) but they'd all share the same data blocks.
3. The package manager copies using CoW (or moves) the files from install directory to the real system. Ideally, again you end up reusing the same data blocks. The install process is efficient, and you save space.
How does it look like?
1. You unpack a source distribution.
2. The build system builds N roughly identical Zip archives, repeatedly recompressing the same source files (note that #GPep517 tries to hack-disable compression, and it usually works).
3. We unpack the Zip archives into the installation directory, getting N disjoint copies of the same .py files…
Well, I suppose we could now use a tool to deduplicate files here. However, think of all the wasted energy: unpack, pack again N times, unpack again N times, find duplicates… Think of all the wasted human effort because someone thought making a package management backend is more enterprisey than a glorified file copying tool.
I run homebrew in a non-standard location, which means some projects aren't installable from bottles but need source compiling.
Sometimes a recipe exists which is badly maintained and unable to build from source unless you use the "normal" directory - but they have bottles built.
... I finally got tired of this, looked up how to resolve them, and wrote my own tool to just direct download any pre-compiled bottle .tar.gz I want.

A quick photo post of the air dried sharp cashew 'cheese' (from Miyoko's recipe) after 4 days of drying. I will next wrap it in greaseproof paper and refrigerate for as long as we can stand to leave it. Or I could just salt the outside lightly again and leave for another few days to deepen in flavour. It's already so good! I think I'll leave it a couple more days, as we already have some of the turmeric black pepper one to eat.

Client requested FULL access to our account that we use to run manual reports. Pointed out to the bosses that it is NOT a good idea. We have it locked down so that only a couple of people can make changes, have it reviewed before we run in production. Having a client with full access is a recipe for disaster as we will not know anything about any change, but we are responsible for the reports.

I have been making this vegan cheese/ cheese sauce substitute for years and it's one of our favourites. My tweaks:
Sub sunflower seeds for cashews
Add ½ cup nutritional yeast ( more liquid)
I have portions of cooked potato, rice & yogurt weighed in bags in the freezer. As I pull out to thaw, I soak the nuts/seeds. Browns and melts nicely even without baking.
