Turns out English has specific rules about adjective order, something I only found out about after some 50 years of learning English. But it's a bit ambiguous even for native speakers like me.
In this case I think "celebrity" is an observation and "gay" is most like origin, so "celebrity gay dads" would be the rule. But both sound right to me, maybe because "gay" is also a kind of observation or "celebrity" is a qualifier.
