Good rundown from Wired on locking down your iPhone though I'd like an asterisk on the VPN section. I like EFF's article for that. A VPN hides some information from the local network/ISP while giving it to the VPN provider. That might help in certain situations, but you have to trust your VPN provider. And a lot of them are sketch.
