I found a good recipe for Beef Wellington for Thanksgiving dinner, and it worked out well. Pre cook beef, make mushroom duxelle (chopped and cooked to a paste) chill overnight then clingfilm and prosciutto, mushrooms and wrap around beef. Prosciutto keeps it together inside pastry.

Soy Glazed Mushrooms...
Grab a bunch of Chestnut Mushrooms, wash and slice them kinda thick.
Warm up a wok
Put some vegan butter or some kind of oil in it... up to you
Add the Mushrooms and some crushed garlic cloves, fry for a few mins until softened
Splash 2 tablespoons of dark soy sauce and fry for a bit longer.
Serve with jasmine rice.
