Recipes are full of directions like “when the top starts to brown” or “when it is firm to the touch but not hard.”
Very often, the thing the directions are taking about is not the actual important trait, but a •proxy• for something important you can’t see directly. Maybe the inside of the bread is fully baked when the top starts to brown. Maybe dangerous bacteria are killed when the quiche is firm to the touch. (I am making this up; don’t @ me about quiche.)
Proxy indicators, heuristics, rules of thumb, call them what you like: they’re essential in cooking.

Pot lights are a mistake, an architectural foible that’s ubiquitous because it makes a place look glamorous when you’re walking through thinking of renting/buying it. Looks good in photos too. And they’re fine for cooking or reading because you’re looking down. But for activities like conversation or chilling in front of the screen, they glare annoyingly. Nice glass wall or ceiling light fixtures are way easier on the eyes.
Finally made macaroni cheese tonight after days of thinking about it and added in leftover broc and cauli, craftily making macaroni cauliflower cheese. I think my cooking mojo might be stirring back into life. I love cooking and am right into nutrition, but if I'm tired or overwhelmed, and I've been both the last few weeks, it's the first thing to fall by the wayside.
Again I'm confused at the human urge to pretend something is way more automated than it really is. Examples:

My youngest daughter is visiting this weekend, and while cooking our family breakfast, we had a long conversation about #AI and #LLM applications. She works for a nonprofit - Rainbow Railroad - and is in charge of all their data applications and funding processes. Her manager is suggesting that they need to start exploring AI/LLM, perhaps to automate email responses to donors. Her response, backed by the fundraising team, is "no effing way will a machine talk to any donor." Losing the personal touch can kill an organization that relies on the emotional empathy and kindness of the public.
That led to a new discussion - are there examples of #AI being used for good. #AskEllyn, the nonprofit chatbot that supports breast cancer patients, was the only one we could name, unfortunately, because both my daughters have relied on it over the past few months.
Tell me about other positive examples of AI - bonus points if they're Canadian.

Several years ago we had smoky pies and rolls for Thanksgiving because we put off cleaning the ovens until it was too late.
I created a recurring Todoist task to clean the ovens on the 3rd Sunday of November. Ever since then we’ve had pristine ovens and smoke free cooking every Thanksgiving.
Collette appreciates that a holiday for which most of the tasks are hers, she doesn’t have to worry and the ovens are ready to go.
