The first seems underspiced/undercheesed but the second one looks interesting. I am suspicious of any Mac & Cheese recipe that does not require the creation of a proper bechamel-based cheese sauce. The 2 methods here (both basically creating the sauce as part of the bake) make me very nervous.

Two of the best macaroni and cheese recipes I’ve ever tried came from a 2006 NYT Food article called “the Winter Cook.” One is a classic mac and cheese casserole with crispy edges. The other is a more unusual creamy mac and cheese casserole that includes cottage cheese and a hint of nutmeg.

Finally made macaroni cheese tonight after days of thinking about it and added in leftover broc and cauli, craftily making macaroni cauliflower cheese. I think my cooking mojo might be stirring back into life. I love cooking and am right into nutrition, but if I'm tired or overwhelmed, and I've been both the last few weeks, it's the first thing to fall by the wayside.

In fact, the bar to beat is Sysco pre-shredded cheese, store or Sysco brand chips, onion, tomato, pickled jalapeño, sour cream (and salsa _on the side_) and a Salamander heater. Easy to screw up, but not actually rocket science to make. But that's the bar. If you can't clear it, don't put nachos on your menu.

I wasn't terribly hungry tonight so dinner was cheese, crackers, and chilli jam. Pretty tasty. Oh, and a glass of pink moscato just because I felt like it.
